The whole thing was a bust.

so I had posted that we were going to try to be vegetarians for a month. WRONG. it didn't go over my youngest would not eat a thing I made even my pasta salad that everyone loves including him.

and the whole I am going to post daily never worked out cause my darn internet was down for over 2+ weeks.

So I am sorry about that.

we have had a busy month. School. Birthdays, field trips and just being a family.
I have had some bad days as well. I get so down on myself about my weight. You know its funny I have NEVER worried about my weight. I always had the LOVE ME FOR ME OR GET LOST attitude but now I am obsessed with being fat. I hate all my cloths I hate to look at myself and I hate that Nolan still finds me attractive.
Now with that said you all are probably wondering "WELL WHAT ARE YOU DOING ABOUT IT?" and the answer is NOTHING BUT GETTING DEPRESSED.

I tryed really hard to exercise and walk everyday or ride my bike. but then I lapsed and have not been able to get outta the rut. I say everyday I WILL DO BETTER TODAY. Heck I even went to a Nutricianist and spoke with her she informed me I need to eat more. I can't I am not a eater. ( I know funny huh. ) what I mean is I am not a breakfast lunch dinner and snack person.

I eat dinner and smotimes lunch but all of that no way I am not hungry. and I am a major chocolate and candy person. and am struggling with that.

I wish there was a magic pill i could take and POOF!!! be thin.

I guess I am just in a funk. so I have no desire to do a thing but sleep and veg out.

sorry about it

so here I was so excited about posting my new recipes but it is now 9:57pm and I FINALLY have internet. our internet has been off and on for over a week. they will be here tomorrow to fix it Hopefully. so I can't post a tone for fear it will shut down on me once again.

But I promise the moment its up and running with NO issues I will get the pictures posted and the recipes.

Fridays Dinner Was a Bust. Saturdays was WAY BETTER

So Friday we had to go to Temple so I was not home to cook. So Saturday I was determined to cook. Although when its 94 out and the humidity is INSANE and I refuse to turn on my AC it makes cooking a real treat. Not to mentions I had just mowed the front yard of a 1 acre parcel while Nolan did the rest.

So I have no idea what its called but I will list the ingredients and by the way it was super duper yummy

1/2 c EVOO
1/2 Butter
1 whole lemon ( squeezed and zested )
1Tablspoon Italian seasoning
1Tsp Basil ( I had to use dried I didn't have fresh )
1/4 c White Whine Vinegar
1/2 white onion chopped well
1Tablespoon Garlic ( I used the garlic in a jar that I had in the fridge.)
2 cups chopped grape tomatoes
1 can White northern beans rinsed and set aside

I box Whole Wheat Spaghetti/


So I added the EVOO, Garlic and onion and let cook for about 15 min on low. then added the butter the lemon juice of the lemon. the zest, the vinegar and the seasoning let simmer for another 10 min while the water boiled. I added the spaghetti then salted the water with Kosher salt till al denta and dranied added the EVOO mixture the chopped tomatos and beans tossed sprinkled with Parmersan and ate..

IT WAS SUPER DUPER YUMMY.

I think next time I will toast up some Pine nuts and add them along with some artichoke hearts and asparagus. The boys loved it but then love anything with beans. I forgot to take a phot we were in a rush to get to church so next time I deffinatly will.

Whats for Dinner tonight...... BROCCOLI CHEESE BAKE

OK so I completely forgot to take a picture of the ingredients but this is were I got the recipe.

its int he oven baking I added Mushrooms to ours seeing how we like mushrooms. the boys aren't fans but they are big so they can pick them out. I also added Garlic Powder

Broccoli Cheese Bake


"This is a great casserole that I threw together one day when a friend requested Broccoli au Gratin for her birthday dinner. This is a great idea for those who aren't big fans of bread crumbs. Also, the eggs can be taken out for a great sauce and using skim milk and fat-free cheese works well, too. It's basically a great recipe that can be easily altered according to taste. Enjoy!"
PREP TIME 15 Min
COOK TIME 30 Min
READY IN 45 Min




INGREDIENTS (Nutrition)

  • 8 cups fresh broccoli
  • 1/2 cup butter
  • 2 tablespoons all-purpose flour
  • 1 small onion, chopped
  • 1 1/4 cups milk
  • salt and pepper to taste
  • 4 cups shredded Swiss cheese
  • 2 eggs, beaten

DIRECTIONS

  1. Preheat oven to 325 degrees F (165 degrees C).
  2. Place broccoli in a steamer over 1 inch of boiling water, and cover. Cook until tender but still firm, about 2 to 6 minutes. Drain.
  3. Melt butter in a medium saucepan over medium heat and add flour; cook until bubbly. Stir in onion and gradually add milk, stirring well. Bring to a boil and cook for 1 minute. Remove from heat and season with salt and pepper. Stir in cheese and eggs; mix well. Combine mixture with broccoli and transfer to a 9 x 13 inch casserole dish.
  4. Bake in preheated oven for 30 minutes.

Lions, and Tigers and Vegetariens OH MY!!!

So it has been several days since posting. And alot has happened.

First and for most my boys have asked to become Vegetarians. They said they no longer want to kill animals for food. Other than Fish of course. So Nolan and I decided Sure why not. I mean they both LOVE vegetables and they eats lots of Beans so I am so not worried about the protein they will get plenty. I am however worried about the meals. I mean there are TONS of Vegetarian Meals my question is WILL THEY EAT THEM?

So I have done my Grocery shopping for the month and bought NO MEAT. so now its time to come up will meals they will eat. So from Now on I am going to post every day a new Vegetarian meal that we have that day and rate it. So kinda like the Blog A YEAR OF CROCKPOTING this is going to be

A YEAR OF VEGETABLES


I will post the ingredients the recipe and then a picture of the final outcome and what we rated it as a family. Should be interesting. Oh and please feel free to post a recipe that you think we would enjoy. the more the merrier.


Now on to some sad news. yesterday we lost a beloved pet. Bellatrix the cat. She was only with us a short time ( Aug-May) not even a year. She was the twin of Narcissa and we loved them both. Bellatrix was backed over by Nolan. It was very sad and Nolan had a real hard time with it. I believe I had a much harder time dealing with it. I have only ever lost one other cat and her name was Shadow and that was very hard for me. They boys however took the news WAY better than I did and when Nolan came home from work we went to Home Depot and bought some plants and a pretty stone to make her a nice grave.
WE WILL MISS YOU BELLA.....
this is the only photo we have of her. she was a very shy kitty and Logan was the only one that could calm her.
